Rocket Arugula is also known as "rocket salad" or "roquette". Popular in Italian cuisine and grown as an aromatic salad green in Europe for many years, ancient Romans were also known to have eaten its' leaves and used the seeds for flavoring oils.
It is currently enjoying resurgence as a popular salad green as all of the plant is edible with a long harvest season. A great cut and come again plant, also used with other herbs such as sorrel and garlic in soups and stews.

Wild Italian Arugula has a more intricate flavor than regular Arugula: tantalizingly complex - sweet, nutty, tangy and peppery. Deep green, finely cut leaves display spicy, edible flowers.
For best flavor, pick leaves when 4"-5" long and plant is no more than 8"-10" high. So tasty that it's addictive. Grow spring or fall.

Bull's Blood Beet is an exceptional dual-purpose heirloom. There is very little green color anywhere on this plant. Harvest baby greens at 35 days or so. Later, as they mature, Bull's Blood greens turn dark burgundy and develop a rich flavor. These offer the drama of radicchio without its bitterness.

Nai Pe Tsai Baby Bok Choy is a baby type that is fast-growing, with vigorous, 7"-8" plants of deep-green leaves, succulent and crunchy with a mild, mustardy flavor. One of the most used vegetables in various Oriental dishes due to its excellent flavor, texture and size.

The Red Cored Chantenay Carrot was introduced from French seed company Vilmorin-Andrieux in the late 1800s. This crisp, tender, sweet, and crunchy carrot is large bodied, deep red-orange to center. Fine grained smooth refined shape with wide shoulders great for bunching. Sweetens in storage.

Fordhook Giant Swiss Chard is a 1750s heirloom. Introduced commercially in 1934 by W. Atlee Burpee & Co. Broad dark green heavily crumpled leaves 24-28" tall with white veins and thick 2 1/2" wide stalks. Abundant producer all season, even after light frosts. Excellent for greens, was also used for poultry feed.

Bloomsdale Spinach, known also as Long Standing, was introduced by the D. Landreth Seed Company in 1826, and is the most popular home gardener spinach sold. Early, glossy dark green, savoyed leaves are exceptionally tender and richly flavorful.

Uncommon, old European variety. Red Russian Kale is quite different from either of the more common curly and Tuscan varieties. The base color is a blue-green with brighter purple accents, and the leaves are flatter than other types, with long, frilled edges.
Rich in taste steamed, stir-fried or fresh in salads. Cold hardy, it can be picked continually until early winter. Does best in cool weather, excellent for a Fall and Winter garden crop.

Open kale from 18th century Tuscany. Lacinato Kale has strap like blue-green leaves that are heavily savoyed 3 in wide x 10 in long.

Vates Blue Curled Kale is a Scotch type that is slow bolting with finely curled crunchy sweet blue-green leaves. Low growing variety with short stems, 12-16 in tall with 24 in heads.

Oak Leaf Lettuce was first introduced in 1771 by Vilmorin. Firm rosettes of tender, sweet, light-green, deeply lobed leaves. As outer leaves are picked, plants produce more inner leaves.
Keeps quality late into summer, resists heat and bolting. An old standby with good reason. Ornamental, too.
