Yellow Sweet Spanish Utah Onion has a deep globe up to 6" in diameter and up to 2lbs. each. Shiny straw brown skin with white medium firm flesh is a heavy producer. Well adapted to the Western United States, and similar climates.
This sweet onion is very popular for slicing and eating raw because of its mild sweet taste and is delicious baked, sautéed, or fried. Named the state vegetable in the 2002 General Session of the Utah State Legislature.

Peppergrass Cress grows quickly and produces medium green leaves, which are cut deeply giving them a lacy look. Easy to gro, spicy, peppery salad green similar to watercress.
Ready when 6 to 12 inches high, trim shoots for continuous crop. Sow in very early spring. Reseeds, comes up again the following year. Even good on windowsills.

Corn Salad/ Lambs Lettuce/Mache has long oval green leaves with a unique, nutty, delicate, buttery flavor and are a significant source of iron and vitamin C. Grown as a salad green in America, France and England since the 1700’s.

Tatsoi Chinese Mustard has grouped, broad dark green thick spoon shaped leaves in a large rosette, mild flavored salad green, also good for stir fry.
Very cold tolerant, this is a great green that is featured in Eliot Coleman's The Winter Harvest Handbook. Many consider the flavor superior to Bok Choy with its high calcium and vitamin content. Can be harvested at almost any stage of its growth.

De Cicco Broccoli was introduced in 1890, this old reliable European variety sports compact 2-3 ft. light green plants with 3-4 in. bluish-green central head, then lots of medium sized side shoots.

Catskill Brussels Sprout is a dwarf or semi-dwarf variety with heavy yields, large firm dark green early 1 1/4 - 1 3/4" sprouts on 20-24" plants with medium green leaves. A heavy producer, it is used mainly as a fall crop or in cool climates.
Our open pollinated Brussels sprouts lack the uniformity and roundness of modern hybrids, but have a depth of flavor that is unmatched. Very hardy and uniform, becoming sweeter after first frosts. Classic European fall and winter green.

Early Jersey Wakefield Cabbage was introduced about 1840. These small 2-3 pound distinctly pointed, conical shaped heads are fast growing, ready for early summer harvesting. Best cabbage for early spring planting.

Danish Ballhead Cabbage, also known as Amager Short-Stemmed is a very dependable and productive variety, resists bolting and splitting and is a good keeper. The large round, blue-green heads are 7-8” in diameter, weighing 5-7 lbs
Introduced commercially by W. Atlee Burpee in 1887, this was a very popular variety of cabbage during the 19th century. Its history seems to be much longer, as the “Amager Short-Stemmed” strain was developed by the Dutch on Amager Island, just outside of Copenhagen in the 15th Century.

Frisee Endive is rich in many vitamins and minerals, especially in folate and vitamins A and K, and is high in fiber. It has finely cut and narrow lacy leaves and is used extensively in gourmet salad blends for its texture, appearance and unique nutty flavor.
As part of the chicory family, endives and escaroles are grown in a similar manner. They love cool temperatures the best for planting, and do well planted in spring and again in the fall.

Early Palla Rossa Raddichio is an Italian Chioggia type of chicory, Palla Rossa means "red ball" in Italian. Deep green outer leaves protect a tight, 4-7" diameter, round wine-red head with white ribs.

Bianca Di Milano Chicory, or white Milano, is a classic Sugarloaf type chicory with Romaine-shaped heads.

Early White Vienna Kohlrabi is a dwarf heirloom with short tops and medium stems. Bulbs have crisp, white, tender flesh with a very mild, turnip-cabbage taste. The young leaves are mild flavored as well, making a good addition to salads.
Kohlrabi is a cool season crop, so plant early in Spring or later in the Summer for a great Fall taste. After peeling, kohlrabi can be eaten fresh and raw in your salad, grated into a coleslaw, creamed or frozen. When cooking, use a gentle heat and less time to retain its mild flavor.

Purple Vienna Kohlrabi is a standard heirloom home and market garden variety. An old, well loved cultivar, it is probably the hardiest of all of the Kohlrabis. Considered tastiest when the bulb reaches 2-3 inches.
Purple-skinned bulbs with greenish-white flesh having small tops, slightly larger and later than Early White Vienna. Bulbs have a crisp tender flesh with a very mild turnip-cabbage flavor. The young leaves make a good addition to salads.

Romanesco Fennel is also called Roman or Florence Fennel. Traditional Italian herb with a wonderful aniseed taste. Used to add flavor to breads, curries, apple pie and fish or poultry dishes.
