Kale/Collards
Kale or leaf cabbage is an ancient crop grown in the Mediterranean and refined by the Greeks and Romans, who bred the ancestors of our modern kale varieties. It appeared in Europe during the Middle Ages and traveled to Canada and the US through Russian traders in the 19th century. Until the 1990s kale was mostly used as decoration until it became popular as a vegetable for its high nutritional content.
It grows well in a range of climates and easily tolerates cold and heat while producing prolifically.
