Pasilla Bajio Pepper

These mildly hot, slightly sweet very distinctive slender 8-14” peppers ripen from dark green to red then to brown. Fully ripe they have a unique rich and full flavor.

One of the key ingredients in mole, a signature Mexican holiday sauce from the Oaxaca region.  Also known as Chile Negro, or Chilaca.


Indigenous to Central and South America, peppers were developed into a crop plant around 3,000 BC or perhaps even earlier. Columbus introduced Capsicum into Europe and it also spread to Africa and Asia.


Peppers are used fresh, dried, and cooked. Peppers contain vitamins A and C.
