Salad Burnet - Completes the Salad
Perennial herb with a stout creeping rhizome, tufts of graceful pinnate foliage, and slender stems with spheres of red-tipped green blooms that appear in early summer. An Italian proverb says ‘The salad is neither good nor good-looking when there is no burnet.’
Burnet is an herb of Mediterranean origin that later spread throughout Europe. Although now mostly used for culinary uses, at one time burnet was considered an important medicinal (to treat infection and gout), it was one of the first herbs the colonist brought to their new home. Sanguisorba is from the Latin sanguis (blood) and sorbeo (to absorb), describing the plant's ability to heal wounds and internal bleeding. The astringent properties are used to control bleeding, reduce skin inflammation and kill pathogenic organisms.
The tender, young leaves have the best flavor, they tend to get bitter as they mature. Plucked whole and sprinkled on salads they add a refreshing spice, a nutty cucumber flavor for salads, tomatoes, cheese, teas.
