Yellow Sweet Spanish Utah Onion

This onion has a deep globe up to 6" in diameter and up to 2 lbs each. Shiny straw brown skin with white medium firm flesh this onion is a heavy producer. Well adapted to the Western United States, and similar climates.

This sweet onion is very popular for slicing and eating raw because of its mild sweet taste and is delicious baked, sautéed, or fried. Named the state vegetable in the 2002 General Session of the Utah State Legislature.

This is considered a long day onion but it grows well in intermediate day areas when planted early. Long day onions produce best in areas where daylength exceeds 14-16 hours of sun in the summer. 

History

The onion exists only in cultivation and is thought to be a cultigen derived from wild species in the Middle East. It has a recorded history dating back to at least 3000 BC. They are now found worldwide and almost every culture incorporates them into their cuisine.  

Uses

Onions have an exceptionally wide range of culinary uses. They are eaten fresh or as an ingredient in salads, soups, sauces, stews, curries or processed in pickles and chutneys. The main attraction is the distinctive savory flavor which is due to a complex mixture of sulphur compounds.
