Chicory, Endive, Radicchio
Chicory, endive, and radicchio are members of the chicory family, a robust, lettuce-like leafy herb indigenous to the Mediterranean region, where it was domesticated from wild relatives. It spread through trade to Europe in the 16th century, where it became highly popular.
Today it is grown for the abundant, crisp leaves with their sweet, nutty flavor with a pleasantly mild bitterness that adds depth to fresh and cooked dishes.
