Collard Greens

Collard greens are the traditional vegetable of the Southern United States but have been grown before recorded history, being among the first brassicas to be cultivated. Ancient Greeks grew kale and collards but made no distinction between the two while the Romans grew and documented several kinds, bringing them along into Britain and France around the 4th century B.C. They arrived in America with settlers in the late 1600s.

Collards are traditionally a cool season crop but can also thrive in the heat if grown in afternoon shade.
