Broadleaf Batavian Endive or Escarole
Wide, curling leaves form around a 10-12" tightly packed head with a well blanched, creamy heart. The heart will blanch to a creamy white while allowing an on-going harvest of the outer leaves. Resembles a lettuce head, an old variety dating back to the 1860's.
A market grower favorite, the leaves are lettuce-like, large, broad, and reach 12 - 16 inches tall. Broadleaf endive varieties, or escarole, are usually less bitter than the curly leaf varieties.
History
Cichorium is a robust, lettuce-like leafy herb indigenous to the Mediterranean region and has been developed into three distinct forms.
Uses
Use like other greens; fresh in a green salad, sauteed, or chopped and added into soups and stews.
Growing Tip
For the most tender and flavorful leaves, plant either early or late in the season to avoid the hot season.
