Clary Sage is both a flower and an herb. Soft, woolly heart shaped leaves with lilac, pale blue, pink or white flowers form in whorls on top of the stems, with the upper lip curled up. Flavors teas, wines, is used as an eye wash, in cosmetics, potpourris, sachets and for aromatherapy. Attracts hummingbirds and many different species of butterflies.

Lyreleaf Sage has whorls of two-lipped, inch-long, bright-blue flowers grow along the upper part of each stem in spring and summer. The young leaves have a mild minty flavor and may be used in salads or cooked as a potherb. The entire plant (harvested and dried as the flowers begin to bloom in the spring), or just the seeds, can be brewed as a tea, which, sweetened with honey, makes a soothing bedtime beverage. The seeds can be ground into flour and used in baking bread.

White Sage has beautiful white foliage that sets off the silver-blue spikes of flowers. The most highly valued and revered of all North American Sages, it is burned ceremonially for purification. This is a broad leaf sage which is prized for its strong aromatic properties.

Known as Garden sage, Common sage, and Broadleaf sage, this small fragrant perennial evergreen shrub has woody stems, grayish leaves, blue to purplish flowers and grows to about 2ft both tall and wide. The Romans are thought to have introduced it to Europe from Egypt as a medicinal herb.
Sage is best used fresh, but can be dried. Long used to season all meats, fowl, stuffings, soups and stews, sausages, sauces and butter with its rich, distinctive flavor.
